Food Safety Is Everyone’s Responsibility

For kitchen, restaurant, café, receiving and stores teams, and supervisors. Duration: 20 minutes including practice.

Learning objectives

  • Explain your responsibility for protecting food.
  • Apply stop, isolate, report and record.

Why it matters

Every meal carries a responsibility to protect the guest’s health. Contamination can occur from receiving to service. If you notice a hazard, stop using the food and inform your supervisor. Do not wait for a complaint.

Hazards to recognise

  • Biological: microorganisms transferred from raw chicken to ready-to-eat salad.
  • Chemical: cleaning products contaminating food.
  • Physical: glass or metal in food.
  • Allergens: milk or nuts unintentionally reaching a meal for a guest with an allergy. Specific controls are needed to prevent allergen cross-contact.

Five daily rules

  1. Keep clean and wash hands at the required times.
  2. Separate raw food from cooked and ready-to-eat food.
  3. Follow approved cooking controls and use the required measurements.
  4. Follow approved holding temperatures and times, and record actual readings.
  5. Use safe water and ingredients; check suppliers, packaging and receiving requirements.

Your role

  • Receiving: inspect supplies before acceptance and record concerns.
  • Stores: maintain storage conditions, separation and stock rotation.
  • Kitchen: apply hygiene, separation and preparation and cooking controls.
  • Service and café: protect food and communicate allergy requests accurately.
  • Supervisor: monitor practice, correct deviations and encourage reporting.

Report vomiting, diarrhoea or symptoms that may affect safe food handling immediately. The responsible person determines the action under the property’s policy.

When you discover a problem

  1. Stop using or serving the suspected food.
  2. Isolate and clearly identify it to prevent accidental use.
  3. Report the food, concern and discovery time to your supervisor.
  4. Record the incident and follow the responsible person’s decision on corrective action or disposal.

Example: a cleaning-product smell near a jug of juice. Stop serving it, isolate it and report. Do not taste suspected food or dilute it to try to make it safe.

Practical activity: spot the hazard

  1. A raw-chicken utensil is used for salad: stop, isolate affected food and report; clean and sanitise equipment under the approved procedure.
  2. A cleaner is beside serving glasses: separate it, check possible contamination and report.
  3. A guest asks about nuts in a dessert: verify ingredient and allergen information before answering or serving. Never guess.

Review and apply

Name one workplace hazard. What is your first action? Who do you report to?

Expected response: a realistic hazard; stop, isolate, report and record; the designated supervisor or food safety lead.

During your shift, identify a hazard and preventive measure with your supervisor. Practical verification: explain the hazard and the response steps. Opening this lesson alone does not demonstrate competence.

Guest safety starts with you: keep clean, prevent contamination and report hazards promptly.
